Honey Roasted Carrots w/ Tahini Yogurt {IHCC: A Little Bit of Sunshine}

We like hummus (heavy on the garlic and lemon).  But it’s hard to find tahini here.

There are people who use peanut butter instead.
I’ve tried it.
Peanut butter is not tahini.

Let’s move on.

Since tahini isn't easily available, you'd think I'd have a ton of ideas in the works just waiting until I get my hands on some.

It’s hummus.  Always hummus.
And often a ¼ jar of tahini going rancid in the fridge.

You can only eat so much hummus.

The Tahini Yogurt tastes a lot like…garlicky, lemony hummus.

The carrots were ok.  Not bad, but not mind-blowing either.
Honestly, I think I'd just eat carrot sticks with hummus!

  1. I don't think enough people are passionate about carrots, but I actually crave them and therefore think your plate looks rather mouthwatering! I also think carrots and hummus compliment each other perfectly so I can see how this dish would work.

    Congrats on finding the tahini. I understand how hard it is to score unique ingredients like that. You mentioned not finding lamb. Do you have a Kroger in your area? I used to be able to find ground lamb even at the small Kroger here in town. Now that we have the mega-sized Kroger I can usually find even more lamb options. I think you could use ground beef and it would be totally fine. There are so many flavors and textures in that recipe and I'm not sure it really matters whether you use ground lamb or ground beef. Or, you could really make the hummus without the meat. The toasted pine nuts and lemon sauce are really good all on their own.

    Roasting the carrots with honey does sound good. Tahini is so darn expensive over here too! So I'll be making my own, have made it before, ages ago! Thought that this time round, I'll just buy it, but the price is too pricey!

  4. Funnily enough, having been force fed carrots boiled to within an inch of their lives as a kid, I'm not a big fan, but I do love roasted carrots. In fact one of my favourite meals is just a huge plate of mixed roasted vegetables with a bowl of hummus to dip them into. I've never thought of making a tahini yoghurt dip before though - sounds like a winner to me.

  6. It looks very bright and pretty, and I actually like the sound of this dish, especially if the tahini-yogurt tastes likes hummus (this coming from someone who likes hummus but has never made it successfully!)

    Nope, Peanut-butter is definitely not hummus LOL.
    We actually prefer tehini-salad and you can never enough of it :)
