Zucchini con Queso, Chicken & Zucchini con Queso

I love Mexican food almost as much as I love Cajun & Creole food.  When I lived in Texas, I loved eating at authentic, mom-and-pop, hole-in-the-wall joints.

Especially the little joint where I first tried guacamole salad, had true enchiladas and tacos with real Mexican cheese

where the owner/matriarch pointed to a table and said "you sit there!"  Even if it wasn't the table you wanted

where the owner/matriarch grabbed a chef's knife and stabbed her husband in the kitchen in the middle of dinner service.

But that's a story for another day.
Let's go with this story instead...

Zucchini con Queso | Ms enPlace

My favorite Mexican cookbook, The Border Cookbook: Authentic Home Cooking of the American Southwest and Northern Mexico by Cheryl Alters Jamison & Bill Jamison, is full of authentic recipes.

Like this creamy, cheesy Zucchini con Queso.

Zucchini con Queso | Ms enPlace

It's not something I get to make often because it's time consuming for a side dish.

But chicken can be added to turn it into a meal.  Making the time it takes more justified.

Time consuming side dishes could turn me a little stabby, afterall.  And you can never be too careful with a chef's knife.

Chicken & Zucchini con Queso | Ms enPlace

If you are up for something different for Cinco de Mayo, Zucchini con Queso could replace those refried beans.

Chicken & Zucchini con Queso could stand in for tacos and enchiladas.

Either way, you can't go wrong.  Just keep that knife to yourself.

Zucchini Con Queso
adapted from The Border Cookbook

Vegetables:
2 Tbsp butter
2 Tbsp olive oil
2 lbs zucchini, cut in fat matchsticks
1 medium onion, sliced in thin strips
1 garlic clove, minced
1 large bell pepper (any color), sliced in thin strips
2 Roma tomatoes sliced into thin strips
1/2 tsp dried oregano
1/2 tsp salt

Sauce:
1 Tbsp butter
1 Tbsp olive oil
1 Tbsp flour
2 cloves garlic, minced
1 (12 oz) can evaporated milk
1/4 cup sour cream
4 oz grated pepper jack cheese

In a large skillet warm butter and oil over medium heat. Add zucchini, onion, and garlic. Saute for about 5 minutes until wilted. Stir in the bell pepper, tomatoes, oregano, and salt. Cook for another 10-15 minutes, until zucchini is very tender.

While the vegetables cook, make the sauce.

In a saucepan, warm butter and olive oil over medium heat. Add the flour.  Cook and stir until bubbly.  Add the garlic, evaporated milk, and sour cream and heat through. Stir in cheese, cover pan, and remove from the heat. Stir again in several minutes if needed to melt cheese evenly. Keep sauce warm until serving.

Serve the zucchini mixture with spoonfuls of the cheese sauce.

Catch Ya Later Donna Hay {Top Five Round-up}

I Heart Cooking Clubs wraps up with Donna Hay this week.
Donna Hay is another chef IHCC introduced me to.  I found her recipes to be easy, simple, and straightforward.  No special techniques or equipment needed.  This doesn't mean that her recipes lacked inspiration.  She creates exciting dishes out of simplicity.

Our next chef will be Nigel Slater, starting March 31st.
~*~*~*~

I would liked to have made more Donna Hay recipes, but Mardi Gras and other things got in the way.  So to make up for lost time, I have two Donna Hay recipes this week.  I served them together for dinner with a salad.

Zucchini and Chickpea Fritters

My son loves chickpeas.  I love crispy on the outside/soft on the inside food.  I really thought these would be a hit, but they weren't.  They were bland and the texture was very dry.  The recipe can be found on Donna Hay's website.

Flat-roasted Chicken with Almond and Mint

This recipe can be found in Donna Hay's Seasons and also on her website.  I need to confess a couple of things.  First, I don't like handling raw chicken so flattened (or spatchcock) chicken never appealed to me since it means extra time touching raw chicken.  Second, even though my mom roasted chickens often, I am not a chicken roaster.  I can't do it.  It never turns out right...raw in places yet overdone in others.  A hot mess.  Grocery store rotisseries for me.

After making this recipe, I will gladly flatten any and all chickens, throw them in the oven, and roast away.

Yep.  That good.  We were amazed by the even cooking, by how tender and juicy the meat was, and how perfectly crispy the skin was.  My son said that the chicken was "as juicy as Popeye's."
(Which is a compliment.)

Then there's this concoction of almonds, lemon juice, garlic, sugar, and mint that is drizzled on the chicken, taking it over the top.

Try it and see.

A Squash is a Squash is a Burger {Turkey & Zucchini Burgers with Green Onion and Cumin}

It's getting to be burger time.  I find it hard to resist a good, cheesy burger right off the grill.

But burgers don't really jive with the lower-carb, lower-cal meals we've been trying to focus on.

These Turkey and Zucchini Burgers with Green Onion and Cumin from Yotam Ottolenghi's Jerusalem (served with Sour Cream and Sumac Sauce) seemed like a smarter choice.

While I'll use ground turkey in place of beef in casseroles and chili, I'm not usually wild about turkey burgers since I find them dry.  Not the case here.  The grated zucchini helped keep the turkey moist.  Green onion, cumin, and mint gave great flavor to these burgers.

My sauce ended up lacking the sumac because I never could find it.  Instead, I decided to mimic  the cumin in the burgers by adding some to the sauce.  The cool, creamy, lemony, sauce was really nice.

These burgers were a smarter choice.  Genius, actually.

Thumbs up all around

The drawback to the zucchini adding moisture was that the turkey mixture was a bit wet to work with.  I ended up adding some breadcrumbs to the mixture to hold it together.

While these burgers would be great in pita with lettuce, tomato, and the tangy sauce, I served them as is with the sauce on top.

This post is part of "A Squash is a Squash, of Course of Course" week @ I Heart Cooking Clubs.

Turkey and Zucchini Burgers with Green Onion and Cumin
Sour Cream and Cumin Sauce

slightly adapted from Yotam Ottolenghi's Jerusalem

*Make the sauce first so the flavors can meld.

1/2 cup light sour cream
2/3 c plain Greek yogurt
1 tsp lemon zest plus more for garnish
juice of 1/2 large lemon
1 clove garlic, minced
1 Tbsp olive oil
3/4 tsp ground cumin
salt & pepper to taste

Mix all of the ingredients in a bowl.  Transfer to a serving bowl, garnish with lemon zest, and chill until ready to serve.

1 lb lean ground turkey
about 2 cups grated zucchini (roughly 1 large)
3 green onions, chopped
2 Tbsp mint, chopped
2 Tbsp parsley, chopped
1/2 tsp lemon zest
2 cloves garlic, minced
1 tsp ground cumin
1/2 tsp cayenne pepper
3/4 tsp salt
1/2 tsp black pepper
1 large egg, lightly beaten
3/4 cup panko breadcrumbs *see note
olive oil for cooking

Preheat oven to 425.

Mix all of the ingredients, except for the breadcrumbs and olive oil, in a large bowl.  Add in the breadcrumbs 1/4 cup at a time until the turkey mixture just holds together.  Wet your hands and shape the mixture into 18 patties.

Meanwhile, add just enough olive oil to coat the bottom of a large skillet, placed over medium heat.  When the oil is hot, place the patties in the skillet, but do not crowd.  Cook on one side until golden, about 2-3 minutes.  Carefully turn and cook on the second side for another 2-3 minutes.  Transfer to a baking sheet.  Repeat with more patties if needed.  Place the baking sheet in the oven and cook for about 7 minutes, or until burgers are cooked through.  Serve with the chilled sauce.  Serves 4.

*Note: you may not need all (or any) of the breadcrumbs.  It will depend on how much water is in your zucchini.

Eatin' Out the Garden

I'm about to blow your mind right here, babe.
Meatless.
And good for you.

Got both for you today.
I know, right?

No, I wasn't abducted by aliens.  Or hit in the head.  Didn't receive a bad report from my doctor.
Summer's cranked up full blast and we're livin' out the garden.

I'm not sure where this sandwich originates from.  It's something we used to serve for luncheons when I worked at a cooking school/catering business.  The ladies loved it.

Know what?  It's hearty enough to please dudes too.
For real.

Colorful.  Tasty.  Surprisingly filling.  One of my summer favs.  It's fun to set all of the grilled vegetables out on a large platter and do a "make your own."

Little tip: the herbed mayo and grilled bread totally make it.

Grilled Vegetable Sandwich w/ Herbed Mayo

1 Japanese eggplant sliced lengthwise about 1/4" thick
1 small zucchini sliced lengthwise about 1/4" thick
1 small yellow squash sliced lengthwise about 1/4" thick
1 small red onion cut into rings
2-3 Portobello caps
extra virgin olive oil
salt & pepper
1 loaf crusty bread, cut into 1/2" slices
red leaf lettuce
1 large roasted red pepper, sliced lengthwise   (I use jarred)
Herbed Mayo (below)

Heat a grill or grill pan.  Lay all the vegetables on a large sheet pan.  Drizzle with olive oil and season with salt and pepper.  Flip all slices, drizzle with more olive oil and season with salt and pepper.  Grill until the vegetables are tender and have grill marks.  When the vegetables are almost done, drizzle a little olive oil on the slices of bread and grill on both sides.

Slice the Portobellos.  Spread mayo the slices of bread.  Assemble the sandwiches with the grilled vegetables, lettuce, and roasted red pepper.

Herbed Mayo
1 clove garlic
about 3/4 c mayonnaise
juice of 1/2 lemon
a few drops of hot sauce
2 Tbsp thyme leaves
2 Tbsp flat leaf parsley
2 Tbsp chopped chives

For a smooth spread, smash the garlic and add it, along with the rest of the ingredients to a food processor.  Pulse until smooth.

Or, mince the garlic and add to a bowl with the rest of the ingredients.  Stir to combine.

Best of made a few hours ahead.
