Sweet or Sassy {Sweet Potatoes w/ Two Compound Butters}

Do you like your sweet potatoes sweet or more on the sassy side?

I grew up eating sweet sweet potatoes.

But as I've gotten older matured, I've learned to appreciate sweet potatoes that lean towards savory.

Spicy even.

Baked sweet potatoes are easy.  Simple.  Especially if you start them off in the microwave to save time.

They can be changed instantly ...fancying them up with a compound (flavored) butter.




There are a lot of possibilities when it comes to compound butters.  Herbs, citrus zest and/or juice, cheeses, dried fruits, nuts, spices.  

I've made a version of the chipotle butter before and used it on top of grilled steak.

It was good on a sweet potato too.
But the Cinnamon Honey Butter...

Maybe I'm not as mature as I thought because I'm back on the sweet sweet potatoes.

(For the Cinnamon Honey Butter...no shame in my game).



Baked Sweet Potatoes w/ Cinnamon Honey Butter
or Chipotle Butter

for the cinnamon honey butter:
1 stick butter, softened
2 Tbsp honey
1 1/2 tsp cinnamon

Mix all of the ingredients in a small bowl.  Scoop onto plastic wrap or parchment paper.  Roll, forming a log.  Crimp or twist the ends and place in the freezer to firm up.

OR

for the chipotle butter:
1 stick butter, softened
2 Tbsp chopped chipotle peppers
1 tsp adobo sauce from the chipotles
1/2 tsp cumin

Mix all of the ingredients in a small bowl.  Scoop onto plastic wrap or parchment paper.  Roll, forming a log.  Crimp or twist the ends and place in the freezer to firm up.

for the sweet potatoes:
6 medium sweet potatoes, scrubbed
3 Tbsp chopped pecans (optional w/ the cinnamon butter)

Preheat oven to 350 F.
Poke a few holes in each sweet potato.  Place in a microwave safe dish.  Microwave on high for about 12-15 minutes, turning halfway through.  Place on a cookie sheet and finish baking in the oven for about 12 more minutes.

Cut a slit in each potato and carefully squeeze each potato to open.  Cut the log of butter into 12 pieces.  Place 2 pieces inside each potato.  If using the Cinnamon Honey Butter, sprinkle chopped pecans on top (optional).

  4. I too, grew up eating sweet, sweet potatoes....but only at Thanksgiving dinner. Nowadays I will bake one and eat it with just butter. But that honey cinnamon butter is calling my name... YUM!

  5. Hi Michelle~ I too love sweet potatoes, on the savory side, but as I've matured....I like them on the sweeter side.....marshmallows and all!! We usually eat sweet potatoes like russet potatoes but the compound butter is fantastic~ Lynn

  8. Both your Sweet Potatoes sound delicious and I love the butters you used. It's great to have things like that on hand. I think my husband and I would prefer the sweet sweet potato but I know my son would love the Chipotle version. Thank you for sharing these delicious ideas with us at the Hearth and Soul hop.
