IHCC: Celebrate!

I've been eagerly waiting for this week's IHCC to come around because I liked the dish I made for it so much.  The whole family did.  In fact, we've eaten it 4 times in the past month.  The Giada finger food I picked is Bruschetta w/ Fontina & Greens...crusty, garlic-rubbed bread topped with garlicky, red pepper flake sprinkled spinach and gooey, tangy fontina.
Dibs on the middle one.
The one with the little cheesy ooze down the side.
Just sayin'.

Part of why I loved this is that spinach is my favorite vegetable.  Not many people seem to share that feeling, but I actually crave spinach.  Not as much as chocolate or coffee, but it's a close race.

Another reason is that it reminds me of an appetizer I used to make pretty often.
  
Giada's version is classier, more sophisticated, and healthier. 

Of course it is.  I mean look at her.


I don't stand a chance!

  2. I crave spinach and other greens too. In fact, this recipe has been on my radar ever since I saw her make it on her show. I'm gonna have to try this one. I might even do it for breakfast with a fried egg on top! Looks great.

  3. Yum - this looks wonderful - I love spinach too, and with that ooey-gooey fontina cheese and spiked with pepper and garlic it's got to be a winner :-)
