And no two people make it the same way.
To "make a gumbo" means much more than cooking. When someone says "I'm making a gumbo," it means family and friends are invited.

Michelle, my better half who is an engineer swears that taking the lid off a slow cooker and stirring will hardly affect the temperature at all - he says all the heat is stored in the ceramic dish. So I stir away with abandon now!
